Yellow is because they like the yellow color.. For the rest it is always good news when an artisan bakery opens its doors in Barcelona. Here everything is made in the tradition of the great bakers: organic flours, home-made sourdough, kefir.
Everything is slow and everything is good. For example, it takes Paul Stoykowich 36 hours to make a ball of bread. Time for the dough to rise..
Paul, an Australian, learned his craft in Sydney and San Francisco before opening his dream shop in Barcelona. Good news because bread is not a great Catalan speciality even if good addresses are starting to flourish like Cloudstreet Bakery .
